How long can I keep cooked leftovers in the fridge?
Most cooked leftovers, including meat, poultry, fish, rice, pasta, soups, and pizza, keep 3 to 4 days at or below 4 C (40 F) according to USDA FoodKeeper and Health Canada. Opened deli meat stretches to 3 to 5 days, hard-cooked eggs to about a week. When in doubt, throw it out. The smell test is not reliable because the bacteria that cause foodborne illness do not always change how food looks or smells.
Why is thawing meat on the counter unsafe?
Counter thawing lets the outer surface of the meat rise into the danger zone of 4 to 60 C (40 to 140 F) within about 2 hours, while the center is still frozen. Bacteria double roughly every 20 minutes in that range. USDA and Health Canada recognize only three safe methods: the refrigerator, cold water changed every 30 minutes, and the microwave with immediate cooking after.
How long does it take to thaw meat safely?
In the fridge, plan about 24 hours per 5 lb (2.3 kg), so a 4 lb (1.8 kg) package of chicken takes about a day and a 20 lb (9 kg) turkey takes about 4 days. Cold-water thawing runs about 30 minutes per pound with the water changed every 30 minutes and the meat cooked immediately. What temperature should my fridge and freezer be?
Keep the fridge at or below 4 C (40 F) and the freezer at or below -18 C (0 F). A cheap fridge thermometer is one of the highest-value kitchen upgrades because many home fridges run warmer than their dial suggests. Reheat leftovers to an internal 74 C (165 F).
Can I refreeze meat after it thaws?
Meat thawed in the fridge and still cold can be refrozen, though quality drops a little. Meat thawed in cold water or the microwave must be cooked first and cannot go back in the freezer raw. Never refreeze anything that sat in the danger zone for more than 2 hours.
