How much food can I actually expect from my garden?

Typical per-plant harvest (in a good year): tomatoes 10 to 20 lb, peppers 2 to 4 lb, zucchini 8 to 12 lb, bush beans 0.5 to 1 lb of dry beans or 2 to 4 lb of fresh pods, cucumbers 8 to 12 lb, winter squash 10 to 20 lb. What's a realistic per-plant yield?

Use university extension or seed catalog averages as your starting point, then derate by 20 to 30 percent for first-year gardens, poor soil, or marginal climates. Best-case yields on seed packets assume professional-level watering, fertilization, and pest control, new gardeners typically hit 50 to 70 percent of those numbers. Why does my actual yield vary so much from year to year?
